Dal Tadka – Follow the below steps to prepare dal tadka. It is traditionally a north Indian dish prepared by cooking the dal (lentils) and adding tadka (tempering) at the end.The tadka makes the boring dal taste remarkable. I have also used a smoking method to infuse the dal with smoky flavor

So preparing this recipe calls for 3 steps which are very easy & quick. First, to cook dal, then smoke the dal & last prepare tadka and add it to smoked dal. Dal tadka is best served with steamed rice or roti/naan.

Ingredients

Dal
  • 1/2 Cup tuvar dal (Pigeon pea)
  • 1/4 Cup moong dal (Green gram)
  • 1/4 Cup chana dal (Chickpeas)
  • 3 medium sized onions (roughly chopped)
  • 2 medium sized tomatoes (roughly chopped)
  • 1 tbsp. ginger finely chopped
  • 4 green chilies slit
  • 1 tsp. turmeric
  • 2 tsp. garam masala
  • 1/2 tsp. Hing
  • 1 tbsp. garlic finely chopped
  • 4 Cups water
  • 2 tsp. red chili powder
  • 1 1/2 kasuri methi crushed
  • Salt to taste
Smoking
  • 1 piece of charcoal
  • 1 tsp. ghee (clarified butter)
Tadka (tempering)
  • 2 tbsp. ghee (clarified butter)
  • 1 tsp. jeera
  • 1/2 tsp. hing
  • 1 tsp. garlic
  • 4 dry red chili
  • 3 tsp. red chili powder
  • 5-6 curry leaves
Garnish
  • 1/4 Cup coriander leaves

Steps to prepare dal tadka

Dal
  • In a pressure cooker, add the dals, green chilies, onion, tomatoes, ginger, garlic, salt, hing, water, red chili powder, garam masala & turmeric. In short, all the ingredients mentioned under dal
  • Pressure cook the dal for about 4-5  whistles. Let the steam go out naturally.
  • Check the dal whether its done (should be smooth)
  • Check the consistency of the dal. Add more water if you like it a bit runny. Adjust the spices, salt accordingly & keep it aside.
Smoking
  • Heat the piece of charcoal. Use microwave rack to place charcoal directly on flame
  • Once the charcoal becomes red hot from all the sides, place it in a small bowl, preferably steel or aluminum
  • Place the bowl in the dal prepared (Bowl should be floating on dal surface)
  • Add 1 tsp. ghee onto the hot charcoal & cover the dal, so that the smoke coming from charcoal will be trapped inside & dal will be infused with smoky flavor
  • Let the charcoal remain for about 2 minutes. You can keep it for more time to get more smoky flavor, but I prefer to keep it for 2 minutes only
Tadka
  • Add 2 tbsp. ghee in a small bowl & heat it
  • Add garlic to it & fry it for a minute
  • Then add jeera & curry leaves & fry
  • Lastly add, chili powder & hing to it and turn off the flame to avoid burning of spices
  • Let the tadka simmer for about a minute
  • Add this mixture to the smoky dal prepared
  • Garnish it with of coriander & crushed kasuri methi

Notes

  • Please adjust the spice according to your taste. The red chili powder I used in this recipe was not spicy, hence used the described quantity.
  • You can soak the dal for 1-2 hours before cooking. This will help to cook the dal quickly
  • You can prepare the dal & smoking before-hand & then while serving you can prepare the tadka & add it to dal and serve
  • Oil can also be used for tadka, but for better test, use ghee
